Quick and Easy Matcha Protein Balls

2.9g of protein per ball


These quick and easy Matcha protein balls take no time at all if you have a Nutribullet or similar blender- and they taste great! They are also gluten-free and vegan, with no added sugar. Keep them in the fridge for up to 2 weeks.


Ingredients:

-1 small cup of shredded coconut

-1 cup of melted cocoa butter

-2 tablespoons of hemp seeds

-2 tablespoons of cashew nut butter

-4 pitted dried dates (soften in hot water if needed)

-1 cup of gluten-free oats

-2 tablespoons of agave nectar

-1 and 1/2 tablespoons of vanilla protein powder

-2 teaspoons of Matcha powder


Decoration:

-Shredded coconut

-Matcha powder


Method:

-Blitz it all up in the Nutribullet, adding more oats if needed to make it more dough-like, or a LITTLE bit of water (I'm talking drop by drop) to make it soft enough to roll.

-Scoop it out into a bowl and make small balls by rolling the dough.

-Have one small dish set aside with shredded coconut, and one with Matcha powder, and gently roll the balls ensuring they are covered.

-Leave in the fridge to chill for 30 minutes.

-Eat them all before someone else does!
