Raw Vegan Banana Cookie Dough Bites Recipe



Another quick and easy recipe for these delicious raw banana dough bites- perfect if you've got some overripe bananas to use up during this time of self-isolation, and a fairly healthy alternative to snacking on junk!


Makes 10-12 bites.


Ingredients:

195g cashew nuts

15g gluten free oats

100g coconut sugar

pinch of salt

1/2 a ripe banana

3 tbsp maca powder

1/4 tsp vanilla powder

3tbsp rice malt syrup/agave nectar

1 tbsp coconut oil


For the coating:

50g melted coconut oil

60g cacao powder

100g melted cacao butter

1 tbsp agave nectar


Method:


Blitz all of the ingredients in a Nutri-bullet or blender until it has a doughy consistency (add more oats to thicken if needed) and set aside in a bowl in the freezer for about 10 minutes.


In a separate bowl, melt the coconut oil and cacao butter and add the cacao powder and agave until it looks like melted chocolate. Roll the dough into small balls and dip in the melted chocolate mix, I recommend two dips per ball for a thicker coating.


Set on a plate and leave in the freezer for another 15 minutes, and then transfer to the fridge and leave for an hour or so... then eat them before someone else does ;)
